Spiced Cake
Here’s a very nice cake that has a big plus, it’s suitable for both vegetarians and vegans. It’s also good for dieters hoping to avoid trans-fats and high cholesterol content. One tip with regard to the latter, do not include cashew nuts in the mix.

Recipe submitted by MissKari, 01/04/10 Spiced Cake Ingredients (use vegan versions): 1-1/2 cups water1 cup sugar
1/2 cup vegetable shortening
2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
2 cups dried fruit of choice, chopped
1 cup nuts of choice, chopped
2 cups baking flour
1 teaspoon baking powder
1/2 teaspoon baking soda Directions: 1. Preheat oven to 325 degrees F. 2. In a bowl, combine water, sugar, shortening, cinnamon, cloves, nutmeg, and salt. Blend until smooth. Add dried fruit and nuts and blend again. 3. In a separate bowl, mix together flour, baking powder, and baking soda….
