“Mexican Lasagne” Casserole

Definitely okay for vegetarians but vegans may need to adjust the ingredients a little. This lasagne dish works for meat eaters as well just because it’s a nice supper dish anyway. Crisp salad and crusty bread is all you need to add.

"Mexican Lasagne" Casserole

Ingredients (use vegan versions):
   
    Rice:
    6 cups vegetable broth or no-chicken broth
    1 bell pepper, diced (yellow, orange, or red preferably)
    3 cups rice (brown, white or a combo – but nothing too aromatic)
    2 tablespoons olive oil
    juice of 2 limes

    2 tablespoons chili powder
    1 tablespoon garlic powder
    1 tablespoon crushed red pepper
    1 tablespoon tamari
    black pepper, to taste

    Tofu:

    2 (14-ounce) packages firm or extra firm tofu (preferably organic)
    1 (10-ounce) block Follow Your Heart or 8-ounce Teese cheese (cheddar or mozzarella)
