“Mexican Lasagne” Casserole
Definitely okay for vegetarians but vegans may need to adjust the ingredients a little. This lasagne dish works for meat eaters as well just because it’s a nice supper dish anyway. Crisp salad and crusty bread is all you need to add.

1 bell pepper, diced (yellow, orange, or red preferably)
3 cups rice (brown, white or a combo – but nothing too aromatic)
2 tablespoons olive oil
juice of 2 limes
1 tablespoon garlic powder
1 tablespoon crushed red pepper
1 tablespoon tamari
