Low Fat Roasted Veggies

Roast vegetables does not necessarily mean meat or meat products. This is a vegan recipe that is suitable for everyone and would make a great side dish for the meat eaters.

Low Fat Roasted Veggies

Ingredients (use vegan versions):

    1 pound asparagus, tough ends snapped off
    1 pound whole white mushrooms, sliced in half
    1/2 red onion, cut in thick slices
    Pepper

    Creole seasoning
    Cooking Spray
    Minced garlic (optional)

Directions:

1) Preheat oven to 400 degrees Fahrenheit.

2) Get veggies ready. Put veggies into a large enough baking tin and drench them with cooking spray, add fresh cracked pepper, creole seasoning, and minced garlic to taste. Spray the veggies again with cooking spray and shake the pan around to coat the veggies.
