Baked Apples

Christmas and time for baked apples. This recipe is suitable for vegans but clearly not for those on a sugar-free diet. An interesting variation is to replace the brown sugar with mince pie filling, which would bring it very close to a well known German recipe.

Baked Apples

Ingredients (use vegan versions):

    4 granny smith apples
    2 cups brown sugar
    2 cups water

    1/4 cup vegan margarine
    1 teaspoon cinnamon
    1 teaspoon nutmeg

Directions:

1. Preheat oven to 350 degrees F.

2. Core apples and peel the top 1/8 of the apple. Place in a glass baking dish at least 2" high.

3 In a saucepan, combine remaining ingredients and bring to a boil. Remember to stir every so often! Once at a boil, pour over the apples.

4. Bake uncovered for 60 minutes, basting occasionally. These are great with vanilla vegan ice cream or granola!
