How To Make A Cartouche

A cartouche is what professional chefs use to prevent a skin forming on sauces and gravies, or to slowly poach something in a limited amount of liquid. It prevents evaporation. Making one is simple, once you know how, and if you get into the habit of using one when necessary you will quickly find them an indispensable aid when you want a cheap, disposable cover for something.
