How To Use Anchovies

I love adding fresh anchovies to salads and other dishes, but I find the bottled variety far too salty for my taste. One way to overcome this, and to improve the texture of the fillets, is to soak the little varmints in milk for about 20 minutes before using.
After soaking, rinse them off and then pat them dry. You can use the milk for glazing savory pastries or to make a sauce for fish.
