You Don’t Have To Pronounce It………

In Brittany they make a garlic soup, thickened with potato, that is delicious served with crusty French bread. This version adds in the spices of the Middle East for an exotic soup that would make a great starter or a light supper. Note that it requires a head of garlic, not just a few cloves. The best way to extract the cloves is to cut across the stalk end of the garlic bulb and then microwave it for about 30 seconds. You can then easily squeeze out the individual cloves.

Daily Random Recipe

INGREDIENTS:

    • 2 T olive oil
    • 1 head of garlic, peeled and crushed
    • 1 small hot pepper, finely chopped
    • 2 T finely chopped fresh cilantro (coriander)
    • 4 medium tomatoes, finely chopped
    • 1 medium potato, cut into small cubes
    • 3/4 cup lentils, rinsed
    • 2 t ground cumin
    • Salt and pepper to taste
    • 6 1/2 cups water

    METHOD:
    Heat oil in a saucepan and saut=E9 garlic, hot pepper and cilantro over medium heat for 5 minutes. Add tomatoes and saute another 5 minutes; then stir in remaining ingredients and bring to boil, adding more water if necessary. Cover and cook over medium heat for 45 minutes. Serve hot.
