A Little Andean Magic
I have to confess that until quite recently I had no idea what quinoa is, despite the fact that it’s a staple in Peruvian meals second only to potato. If you are also unaware of it, it’s a grain-like seed that is high in protein, gluten free and rich in magnesium, among other things. This makes it an excellent part of any vegetarian or vegan diet, as well as a nutritious resource for everyone else. You just might have to hunt around a little to find it, buI I did see some in my local supermarket recently, so it is oobviously becoming more well known. Try this easy soup as an introduction.
6 cups vegetable broth (or bouillon)
1 cup red lentils*
1/2 cup quinoa
Greens
2 teaspoon paprika (smoked, if you have it)
1/2 teaspoon cumin
1 bay leaf
1/2 teaspoon garlic powder
Salt and pepper to taste
Dash of liquid smoke

Smoky Lentil and Quinoa Soup with Veggies
Ingredients (use vegan versions):
2 tablespoons olive oil
1/2 to 1 onion, chopped
6 cloves garlic, chopped or minced
4 carrots, sliced
1 cup red lentils*
Greens
2 teaspoon paprika (smoked, if you have it)
1/2 teaspoon cumin
1 bay leaf
1/2 teaspoon garlic powder
Salt and pepper to taste
Dash of liquid smoke
Directions:
1. Heat olive oil in large stock pot over medium-high heat. Add onion and saute until translucent. Add garlic and carrot, and saute for one minute more.
